Is UniKiosk open source?

Not today. The APK is free to use with no restrictions on screen count, but the source is not published. Xibo is the better choice if an open licence is a requirement rather than a preference.

Xibo is free to self-host — why would I pay nothing here instead of nothing there?

You would not, on price. You would choose on operations: Xibo self-hosted means a server, a database, updates and backups. UniKiosk means an APK.

Can UniKiosk act as an Xibo player?

No. They are separate products with separate layout formats.
